Vicki’s Sweet Potato Casserole

Guys, this is big. Every year, my mom makes the most amazing sweet potato casserole. I was lucky enough to get a hold of her recipe for our Thanksgiving-for-two menu and it came out GREAT. Thanks Vick!


4 sweet potatoes
1 cup sugar
1/2 teaspoon salt
2 eggs
1/2 stick melted butter
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

For topping –
1 cup shredded coconut
1 cup brown sugar (I used light)
1 cup chopped pecans
1/2 stick melted butter
1/4 cup flour


Vicki’s Amazing Addicting Sweet Potato Casserole

1. Preheat oven to 400 degrees

2. Place washed sweet potatoes on a baking sheet. Pierce all over with a fork and bake the potatoes for about 1 hour. (To test if they’re done, give them a gentle squeeze. You’ll know they’re done if they’re soft.)

3. Let potatoes cool before removing the skin and mashing the potatoes

4. Mix in sugar, salt, eggs, butter, vanilla, cinnamon and nutmeg. Pour into casserole dish

For the topping –

5. Mix melted butter and flour until smooth

6. Add sugar. Mix

7. Add coconut and pecans. Mix

8. Pour topping over potato mix

9. Cover with foil and bake at 350 degrees for 45 minutes

10. Uncover casserole and bake another 10-15 minutes for topping to brown

11. Serve. Try not to eat in one sitting
