Cooking with hammers: Layered peppermint bark

Need a last minute Christmas gift? Tons of extra candy canes from the CVS Christmas sale? Fear not! This easy yet impressive recipe is just what you need.



16 ounces good-quality white chocolate (like Ghiardelli)
24 coarsely crushed candy canes
7 ounces bittersweet or semisweet chocolate
6 tablespoons heavy whipping cream
3/4 teaspoon peppermint extract

1. Place a large baking sheet upside-down and cover with foil.

2. Melt 2/3 of the white chocolate in a metal bowl or pan over a simmering pot of water.

3. Pour chocolate onto the foil and spread evenly making a sheet of chocolate.

4. Smash candy canes with a hammer.

5. Sprinkle crushed candy canes evenly across sheet of chocolate. Chill for about 15 minutes.

6. Melt bittersweet chocolate in a saucepan over medium heat stirring in cream and peppermint extract until smooth. Cool about 5 minutes.

7. Pour mixture over the chocolate/peppermint sheet. Spread until evenly covering sheet. Refrigerate until very cold and firm.

8. Melt the rest of the white chocolate and pour over firm chocolate sheet. Spread evenly.

9. Sprinkle crushed candy canes evenly over the chocolate sheet. Chill until firm.

10. Once firm, separate entire sheet from foil and break into small squares.
